COOKIN' UP SOME GRUB.....

For Christmas, at the Frischknecht house, instead of buying gifts for their parents, the kids all do some kind of a service project and then write a letter telling their parents the details of what they did. For the past few years, since we've been part of the family :), we have been able to help a little with this fun. This year Miranda, Brandon, Mandy and Jon planned a night to take dinner to the homeless shelter in Sandy. Several family members cooked some delicious crockpot chicken at home. The four "in charge kids" donated and prepared the rest of the meal. We had caesar salad, rolls, bottled water, cookies, pasta and this yummy chicken.... (recipe below) Cooking the noodles turned Brandon and Miranda's house into a sauna. We cooked, loaded it all in the back of the jeep and off we went. We were supposed to have enough for 120 people..... I think we had enough for 420!! But we left them with very full tummies and a refrigerator full of left overs. Thanks to all who organized and planned this. Thanks for letting me be a part of it. It was a humbly and memorable night spent with my very favorite people!!
Crock-Pot Italian Chicken
2-3 chicken breasts
1 pkg. dry Italian Salad Season
1/4 cup butter
Place in chicken in crockpot. Sprinkle seasoning over. Shread butter and dot around on chicken.
Cook on 3-4 hours on low.
Shred chicken breasts and add the following:
1 can cream of chicken soup
1 - 8 oz. cream cheese
Stir well. Cheese will melt and mix in eventually :) Cook for one more hour.
Serve over pasta or rice.
