Peanut Butter Bon Bons

I really like all things chocolate... and things
dipped in chocolate are especially yummy!
We have the 12 days of chocolate at UVI and this
was my treat for my day.
They were scrumptious!!! Tasted like Reese's PB cups.
Peanut Butter Bon Bons

2 c. graham cracker crumbs (app. 2 pkgs)
2 cubes butter (softened)
1 lb. powdered sugar (4 cups)
1 c. creamy peanut butter
1 c. chopped walnuts
1 c. grated coconut (not angel flake)
1 t. vanilla

Combine ingredients - easiest to mix with Kitchen Aid.  Roll into 1 inch balls.
Mixture is pretty dry so pack balls very tight.  Using a toothpick, dip balls into chocolate
sauce.  Set on wax paper until firm.

Melted chocolate sauce:
1 1/2 c. or 6 oz. semi-sweet chocolate
1/4 bar of paraffin wax (for shine)

Note:
I used angel flake coconut...?? couldn’t find grated.  Not sure what the difference is.
I used milk chocolate.... the girl I got the recipe from used semi-sweet and it was yummy too.  I didn’t use paraffin ... I think that is disgusting... but it does make them prettier...
I put my peanut butter balls in the frig for a while to chill them. Helps the chocolate
set up a bit faster and smoother when you dip them. I used A LOT more chocolate than the recipe calls for....can’t imagine that would be enough...
ENJOY!
